Daily Features at One Eleven


Dedicated to serving fresh flavorful dishes, One Eleven Main offers 3 features daily – Arnold’s Farm Pork, Lange Farm Organic Beef and Freshwater Fish Feature.

The creative process begins every morning for each featured dish as the One Eleven Main culinary staff surveys the latest produce deliveries to see which vegetables and fruits are locally available and at their peak. Executive Chef Boughton explains, “Our excitement about one fresh local ingredient may inspire the entire dish.”

Arnold's Farm Pork Feature


The Arnold’s Farm Pork Feature showcases meat raised by Arnold’s Farm in Elizabeth, Illinois, and is processed in the area. The One Eleven Main culinary staff hand-cuts the meat in-house ensuring each cut is to their specifications. Recently featured pork dishes include:

Bourbon Cola-Glazed Roasted Pork
Roasted leg of pork caramelized with a bourbon cola glaze and served with
Yukon gold country smashed potatoes and Two Onion Farm charred baby leeks
garnished with Bluebell Orchard caramel apples.

Braised Pork and Cabbage
Braised pork with Two Onion Farm cabbage, Galena Farmers’ Market potatoes,
Thunder Valley Farm green beans, corn, carrots and jus garnished with candy-coated bacon lardons.

Ginger Braised Country Ribs
Seared country ribs braised in homemade pork stock, onions and ginger served
with homemade barbecue sauce, applesauce and DeBord Farm asparagus slaw.


Lange's Farm Organic Beef Feature


The Lange’s Farm Organic Beef Feature showcases meat raised by Lange Farm Meats in Platteville, Wisconsin. The One Eleven Main culinary staff hand-cuts the whole beef sides in-house ensuring each cut is to their specifications. Recently featured beef dishes include:

Maple Zinfandel Braised Short Ribs
Lange Farm Meats short ribs braised with Hogback Haven organic maple syrup, carrots, onions and celery served with a Mixed Root Vegetable Hash featuring parsnips, carrots, rutabega and fennel garnished with gremolata.

Pineapple Red Bell Pepper BBQ Ribs
Seared Lange Farm Meats Beef Ribs braised in a Homemade Pineapple Red Bell Pepper Barbecue Sauce served with Horseradish Cheddar Cornbread.

Grilled Flank Steak
Grilled Lange Farm Meats Flank Steak served with Yukon Gold Potato Confit and Broccoli Rabe with a Wooded Wonderland Honey Mustard Glaze


Freshwater Fish Feature

The Freshwater Fish Feature showcases a variety of fish originating from the Great Lakes and regional freshwater fisheries including, but not limited to, catfish, tilapia, trout, walleye, bluegill and perch. Recently featured fish dishes include:

Potato-Crusted Trout
Rushing Waters Fisheries trout breaded with Freeport, Illinois’ Mrs. Mike’s Potato Chips
and served with sour cream and chive mashed potatoes, Thunder Valley Farm green bean
salad with lemon dill vinaigrette, and served with a spicy tomato caper remoulade.

Blackened Catfish
Catfish blackened with Chef Boughton's special blackening spice blend and served
with homemade cream corn Maque Choux.
