It was while living in Brazil that Bill Calvert first started roasting coffee. Then in the early 1990s, as American’s interest for gourmet coffee grew, Bill decided to move from San Francisco to the Midwest and try his hand at wholesale roasting.
It was though a chance encounter with Sherman Dodd, president of Coffee/PER, Inc., that Bill selected his roasting equipment – a brand new, San Franciscan-brand roaster, the fifth roaster Dodd ever built. He installed the 6-foot, 300 pound roaster in a building he bought on Galena’s Main Street.
Because Bill’s main focus is on wholesale roasting, and not retail sales, the long narrow shop doesn’t afford much room for customer seating. But visitors, who make their way beyond the roaster and burlap bags overflowing with green coffee beans, will find a small service counter in the back of the store offering some of the best single-origin coffees and blends, cappuccinos, mochas and iced teas.
